Ingredients:
4 x 200g salmon trout fillets
1 tbs lemon juice
50 ml olive oil (not extra virgin)
1 onion, cut in quarters
2 garlic cloves, smashed
2 bay leaves
1 tsp fresh thyme
1 cup sliced, mixed mushrooms
1 bunch leek tips
3 tots of port
3 drops of truffle oil
1/3 cup of white wine
2 knobs of butter

Method:
Roast salmon with lemon and olive oil in oven for three minutes on each side. Remove from heat and keep warm. Heat a saucepan to a medium temperature. Add the butter, onions, bay leaves, thyme, leek tips, garlic and mushrooms. Sauté for five to six minutes before adding the white wine and the port, and season with freshly ground pepper and salt. Cook for a further three to four minutes before adding the truffle oil. Plate salmon in a deep plate and spoon the sauce over it. Garnish with lemon wedges.
