1 Cheesy Bacon Egg Cups

All you need to make these gems are your fav breakfast staples. The best part about these cups is that they look super fancy, but you’ll be the only one to know they were easy AF to make.

What you’ll need

  • 3 slices of bread
  • 3 tablespoons shredded cheese
  • 6 slices of bacon, cooked
  • 6 eggs

Recipe

  • With a jar or cookie cutter, cut 2 circles into each piece of bread. Place in muffin tin cups.
  • Wrap a piece of cooked bacon along the edge of each muffin cup—make sure the bacon is JUST cooked and still warm, so it doesn’t break or crumble.
  • Sprinkle 1/2 tablespoons cheese into each cup, then top with an egg.
  • Season with salt & pepper, and bake at 204°C for 15 min (longer for firmer yolk).
  • Top with green onion.
  • Serves 6!

Zucchini Wedges

What you’ll need

  • 3 large zucchinis
  • 2 eggs, beaten
  • 2 cups Italian breadcrumbs
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon pepper

Prep

  • Preheat oven to 180°C.
  • Slice the ends off of each zucchini, then slice them in half and into wedges.
  • In a bowl, mix breadcrumbs, red pepper flakes, and salt.
  • Dip each wedge into egg mixture, then breadcrumb mixture. Place on a baking sheet, skin side down.
  • Bake 15-20 minutes.
  • Serves 3 – 4!

Avo Wedges

What you’ll need

  • 3 ripe avocados
  • 2 eggs, lightly beaten
  • 1 cup flour
  • 2 cups panko breadcrumbs
  • Salt, to taste
  • Cayenne pepper, to taste

Prep

  • Preheat oven to 200°C.
  • Slice each avocado in half, then into wedges. Scoop out of the peel.
  • Mix breadcrumbs with salt and cayenne.
  • Dip each avocado wedge in flour, then eggs, then breadcrumbs
  • Place on a parchment-lined baking sheet, and bake 12-15 minutes, flipping once.
  • Serves 3 – 4!

3 Garlic stuffed mushrooms

What you’ll need

  • 15 mushrooms
  • 1 tablespoon canola oil
  • 2 tablespoons chopped garlic
  • ½ tablespoon kosher salt
  • ½ tablespoons freshly ground black pepper
  • 28g softened cream cheese
  • ¼ cup Italian breadcrumbs
  • ½ cup shredded parmesan cheese, divided
  • 2 tablespoons chopped parsley
  • Salt
  • Freshly ground black pepper
  • Chopped parsley, to garnish

Prep

  • Preheat oven to 177° C.
  • Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
  • Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
  • In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.
  • Space out the mushroom caps evenly on a baking sheet, upside down. Spoon a generous amount of the cream cheese mixture on top of each mushroom Top each mushroom with a sprinkle of parmesan cheese.
  • Bake for 20 minutes.
  • Garnish with a sprinkle of parsley
  • Serves 15!

4 Chickpea Curry

If you haven’t had a chickpea curry, you haven’t lived. If you’ve never made one, here’s a simple way to ease into it. It’s not better than your Aunt’s but a girl can dream, right?

What you’ll need

  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece ginger, peeled and grated
  • 1 jalapeño pepper, seeded and sliced
  • 2 tablespoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups fresh tomatoes, diced
  • 2 425g cans of chickpeas, drained and rinsed
  • ½ cup water
  • ½ lemon, juiced
  • ¼ cup cilantro, chopped

Prep

    • Heat olive oil in a large stock pot or dutch oven over medium-high heat.
    • Add onion and cook until onion becomes translucent and begins to brown, about 3-5 minutes.
    • Add garlic, ginger, and jalapeño. Continue to cook over medium heat until garlic is fragrant and jalapeño is tender, about 3-4 minutes.
    • Add garam masala, turmeric, salt, and pepper then continue to cook for 1-2 minutes.
    • Add tomatoes, chickpeas, and water.
    • Stir to incorporate, making sure to use the spoon the scrape off any brown bits that have appeared on the bottom or sides of the pot.
    • As the tomatoes break down, the mixture should take on the texture of a thick stew. Add more water if needed before bringing everything to a simmer and covering for 15 minutes.
    • Once uncovered, reduce heat to low and mix in the lemon juice and chopped cilantro. Cook over low heat 1-2 minutes until the cilantro has wilted and turned bright green.
    • Serve over basmati rice or with a side of naan.

5 Cheesy pesto crack bread

What you’ll need

  • 1 large Italian round loaf (found in the bakery section)
  • 4 tablespoon butter, melted
  • 3tablespoon prepared basil pesto
  • 3/4 – 1 cup shredded mozzarella cheese
  • freshly chopped parsley for garnish

Prep

  • Preheat oven to 190° C.
  • Use a sharp, serrated knife to cut long rows in the loaf of bread, about 1 inch apart, but do NOT cut through the bottom of the loaf.
  • Turn the loaf 90 degrees and cut more rows, about 1 inch apart, but not cutting through to the bottom.
  • Combine the melted butter and pesto in a small dish and carefully open the cracks of the bread to drizzle the sauce in. If needed, use a pastry brush to get in between the cracks.
  • Carefully stuff each crack with the mozzarella cheese, evenly around the entire loaf.
  • Place the loaf on a sheet of tinfoil and fold up sides, place another sheet of foil on top and cover completely.
  • Place on a baking sheet and bake for 20 to 25 minutes, or until cheese in centre is melted.
  • Uncover the loaf and bake for an additional 5 minutes.
  • Garnish with fresh parsley
