1 Bourbon Maple Chai Punch
Combine 1 ½ cups fresh lemon juice, 2 cups strong chai tea, 1 ½ cups maple syrup, 2 cups apple cider, 2 cups dry hard cider, 4 dashes orange bitters, and 3 cups bourbon in a large punch bowl. Immediately before serving, add a few generous scoops of ice, and top with 4 cups sparkling water. Garnish with apple slices, lemon wheels, and cinnamon sticks. Serves 12 or more.

2 Spiced Apple Sangria
Place a few cinnamon sticks and 2 chopped sweet and crisp red apples in a large jug. Add 1 bottle of red wine, ½ cup brandy, ¼ cup Cointreau, and 1 cup cranberry juice. Refrigerate 6 to 24 hours. Serve in glasses with cinnamon-sugar rims.

3 Cinnamon & Sugar Margarita
Combine 30ml of tequila, 125ml apple cider, 15ml triple sec, and a splash of lime juice in a shaker with ice. Shake well, and strain into a glass. Sprinkle a touch of cinnamon sugar, and garnish with a crisp apple slice.

4 Meiomi Sparkler
Combine 1 tablespoon simple syrup and 1 ½ tablespoons juice from a lemon in a wide flute. Fill to the top with sparkling wine, and garnish with a lemon twist.

5 S’mores Tradition
In a shaker over ice, combine 30ml Remy Martin XO, 22ml Sally Williams Finest Nougat Liqueur, 8ml Bottega Gianduia Hazelnut Chocolate Cream Liqueur, 16ml chocolate syrup, and one egg white. Shake, and strain. Pour the mixture back into the shaker, and shake without ice, then pour into a snifter glass. Top with Digestive biscuit crumbs, and garnish with toasted marshmallows.

7 Silver Mint Gimlet
Gently muddle 2 or 3 mint leaves in a shaker. Add ice, 60ml of gin, 30ml lime juice,and 8ml mint syrup. Shake vigorously, and strain into a coupe glass. Garnish with a mint leaf.
To make your own mint simple syrup:
Place 1 ½ cups fresh mint leaves and stems in a glass jar. Boil one cup water with 1 ½ cups granulated sugar, and stir until completely dissolved. Remove from heat, and pour the mixture into the glass jar. Refrigerate when cool, and discard mint.

8 Candy Cane Lane
Melt one package of semi-sweet chocolate chips in the microwave. Dip rims of Champagne flutes in the chocolate, then roll in crushed pieces of candy canes. Place glasses in the fridge to allow chocolate to harden. For each cocktail, combine 125ml Prosecco and 30ml peppermint liqueur in one of the prepared flutes.

9 Cranberry-Pomegranate Sangria
Place 1 apple, peeled, cored and diced; 1 orange, sliced into wedges; ½ cup pomegranate seeds, and 4 cinnamon sticks in a large jug. Pour in 1 bottle of Merlot or Pinot Noir wine, ⅔ cup vodka, and 90ml Cointreau. Refrigerate, and let infuse for at least one hour and as long as 24 hours. Before serving, add 3 cups of Kombucha and stir. Serves 8 to 10.

10 Caffé Palermo
In mixing glass, muddle 5-6 espresso beans until completely crushed. Add 45ml Averna, 15ml sherry, and 15ml coffee liqueur. Stir for 40-50 revolutions, double-strain into a coupe glass, and garnish with an orange twist.

11 Dude, Where’s My Sled?
In a shaker with ice, combine 22ml pineapple rum, 22ml regular rum, 15ml Fireball No. 6 liqueur, 22ml lime juice, 15ml pineapple juice, 15ml simple syrup, and 2 dashes bitters. Strain into a chilled rocks glass, and top with ice and freshly-grated nutmeg and cinnamon.

12 Negroni Sbagliato
Combine 30ml Italian apertif bitters and 30ml sweet vermouth in a shaker with ice. Strain into a coupe glass, and top with 90ml Brut Champagne. Garnish with an orange slice.

13 Cranberry Ginger Punch
In a rocks glass, combine 40ml Bulleit Bourbon, 75ml cranberry juice, and 8ml ginger syrup. Top with 30ml club soda and garnish with frozen cranberries. To make enough for a group (of 20, or so), pour one 750 ml bottle of Bulleit Bourbon into a punch bowl, and multiply all other ingredients by 20.
